Gifting Day 8: Thumbprint cookies
Thumbprint cookies are a Christmas classic. More than likely, the recipient of this gift will have some Christmas memories associated with this cookie. Talking to people about traditions is a great way to make a connection, thus opening the doorway to talk about Christ.
Consider gifting with the following verse: "Now I praise you, brethren, that you remember me in all things and keep the traditions just as I delivered them to you." 1 Corinthians 11:2
1 cup (two sticks) of butter, softened
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/3 to 1/2 cup strawberry jam
Glaze:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
2 to 3 teaspoons water
In a large bowl, or using the bowl of a stand mixer, cream
together butter and sugar until light and fluffy. Then add extract and beat again (be sure to scrape down the sides of the bowl). Gradually add
flour until dough forms a ball. Cover and refrigerate for 1 hour or
until dough is easy to handle.Once chilled, preheat the oven to 350 degrees. Scoop out approximately 1 tbsp. of dough, and roll into 1 inch balls. Place 1-2 inches apart on ungreased baking sheet. Make an indentation in the center with your thumb and fill with jam. Bake for 14-18 minutes or until edges are lightly browned. Remove to wire racks to cool.
To glaze: combine confectioners' sugar, extract and gradually stir in water, only adding enough water to get to a drizzle consistency. Place the cooling rack over a baking sheet and drizzle the glaze over the cookies.
Once the glaze has set, you are ready to box up and deliver.
