Jam Biscuits



Jam Biscuits

2 cups baking mix
2/3 cup of milk
Any variety of jam
12 to 24 fresh or frozen blueberries

Preheat oven to 425 degrees and line
a muffin tin with paper cups or grease really
well. Combine the baking mix and
milk just until moistened. Place a small
amount of the batter (approximately a
tablespoon) in the bottom of each liner
and top with 1/2 teaspoon of jam and 1
to 2 blueberries. Then divide the remaining
batter up among the 12 cups, trying
to completely cover the fruit. Bake for 13-
15 minutes, or until light golden in color.
These are best served warm. Store in an air
tight container.
