Gifting Day 4: Honey Loaf
This quick bread uses a supermarket short cut, and is super delicious! I love to use local honey in my baking. By using different honeys from around your local region, you can also change up the flavor. This recipe makes two loaves using two 8.5 x 4 inch pans. Gift each loaf, or slice them up and individually wrap and gift the slices.
Consider attaching the following verse: "How sweet are Your words to my taste, Sweeter than honey to my mouth!" Psalms 119:103 (KJV)
1 box yellow cake mix
2 eggs, room temperature
1/2 cup sour cream
1/2 cup honey
1/4 cup milk
1/3 cup coconut oil, melted
Preheat oven to 325 degrees and grease two 8.5 x 4 inch loaf pans.
Using a stand mixer, or a hand mixer and large bowl, combine all the ingredients into the bowl and mix on low to medium speed until all the ingredients are well combined.
Evenly distribute the batter between the two pans, and gently tap the pans against the kitchen counter to release any air bubbles trapped in the batter. Bake for 45-50 minutes on the center rack, and make sure they have room to grow. Bake until golden brown and firm in the center.
Allow the loaves to cool in the pan for roughly 10 minutes. Then remove them from the pan and allow to cool on a baking rack. Store wrapped or in an air-tight container for several days.
