Banana Bread



6 tbs. salted butter, softened
2/3 cup sugar
3 ripe bananas, mashed
1 egg 
1-1/2 cups self rising flour
1/2 cup chopped walnuts (optional)


Preheat oven to 350 degrees and generously grease a 1 qt. loaf pan, or a 8.5 x 4.5 inch pan.
In a large bowl or stand mixer, cream together butter and sugar until fluffy. Add egg and beat again until well incorporated. Add bananas and beat again until the bananas are an even consistency throughout the mixture. Using 1/2 cup at a time, add in the flour and mix until there is no visible flour after each 1/2 cup addition.

Pour the batter into the prepared pan, and sprinkle walnuts over the top. Bake for 50-60 minutes, until a testing skewer comes out clean and the crust is a dark golden brown.  Leave in pan to cool for 10-15 minutes, then remove from pan and allow to cool completely on a rack.
